They Don't Have a Clue Either

If you think those sophisticated Europeans have some kind of ingrained wine knowledge, think again. The average Earthling there knows about as much as any other Earthling does-squat! So how do they know what to wine to have with what dish? Easy. They follow centuries-old regionally-based traditions of pairing apricots and Condrieu (Viognier), goat cheese and Sancerre (Sauvignon Blanc), oysters and Chablis (Chardonnay), Lamb and red Bordeaux (Cabernet Sauvignon/Merlot), or mushrooms and red Burgundy (Pinot Noir).

These are great launch pads. Try one of these pairings at home and see if you feel the same way:  fresh Dungeness crab and a chilled bottle of Chardonnay or grilled salmon and Pinot Noir. There you go, creating a new American culinary tradition!
